A hotel booking in a visa file shows your plan at the time you applied. Travellers commonly change hotels after the decision, for example to a place they prefer or with a better price. What matters is that your trip remains genuine and consistent with the purpose and dates you stated. If your plans change completely (different purpose, much longer stay, different main destination), check whether you should apply again or inform the authorities.
